Chef Apprenticeship Program
Each year, we offer passionate, motivated people the incredible opportunity to join our Hawaii Island restaurant business. Our apprenticeship program provides studying and visiting Chefs professional experience in farm to table kitchens with Hawaii regional ingredients. Please ask your culinary program beforehand the qualifications for credit.

Can Allen attend or speak at our event?
Allen’s schedule is very busy and often booked very far in advance. As much as he would like to, he is unable to attend all the events that he is invited to. Please send dates and details using the form on this webpage and a member of his team will be in touch to coordinate.

Is Allen able to take us on a Big Island hunt, farm, or fishing experience for a special person or occasion?
Allen is flattered by the number of requests from those who would like to gift an experience on the Big Island with him for a special occasion or for a friend or family member. Allen would love for everyone to have these experiences, but unfortunately this is not always possible. He appreciates your support.

We are visiting one of the restaurants, is Allen available to say hello?
We are delighted that you are dining with us and look forward to welcoming you in a Allen Hess restaurant. Allen’s busy schedule means he could be anywhere on island, with his family, working the line at the three restaurants or visiting one of his Big Island vendors. However, you may be lucky and catch him at a time he is visiting the restaurant you are dining in. We wish you a wonderful dining experience either way.

I know a local ingredient Allen might need, could he visit?
Allen works with a variety of local vendors to source local ingredients. Please contact via the form on this page to start a relationship. He appreciates you keeping your eye out!

Can Allen help me with a project or offer me some advice?
Allen receives a high volume of requests for personal projects and advice, and is sadly unable to respond to all of these. Allen wishes his supporters the best of luck with their endeavors and challenges.
